  1. Heat oil in skillet on medium-high heat
  2. Add shrimp and saute 1 minute
  3. Remove shrimp to a dish
  4. Add sherry to skillet and simmer 30 seconds
  5. Add mustard and cream and mix well
  6. Return shrimp to skillet for 1 minute
  7. Add pepper to taste
  8. Garnish with chives on top
