Steps

  1. Brush both sides of pork chops with mustard and set aside
  2. Toss cabbage
  3. Grated apples
  4. And salt in large bowl
  5. In large skillet with lid
  6. Warm 1 tsp of the oil over medium-low heat
  7. Add ginger
  8. Cinnamon
  9. And cloves
  10. Stir 10-15 seconds until fragrant
  11. Add cabbage-apple mixture and maple syrup
  12. Stir
  13. Reduce heat to low
  14. Cover
  15. And cook until ingredients are soft and cooked through
  16. About 30 minutes
  17. Meanwhile
  18. Heat remaining 1 tb oil in heavy skillet over medium-high heat
  19. Arrange pork in single layer
  20. Cook
  21. Flipping halfway through
  22. Until no longer pink in the center
  23. About 9 minutes
  24. Remove cover from cabbage
  25. Stir iin vinegar
  26. And raise heat to medium
  27. Cook until liquid mostly evaporates
  28. 5 minutes
  29. Serve each chop with a mound of cabbage
  30. Garnish with apple slices
  31. If desired
