  1. Beat eggs and mustard in a shallow bowl
  2. Combine bread crumbs
  3. Parmesan cheese
  4. Garlic powder and onion powder in another shallow bowl
  5. With a meat mallet
  6. Flatten chicken to 1 / 4 inch thickness
  7. Dip each chicken piece in egg mixture
  8. Then into crumb mixture to coat thoroughly
  9. Heat oil in a large skillet
  10. Cook chicken over medium heat for 15-20 minutes
  11. Turning once
  12. Until chicken is golden brown
