dijon chicken mushroom stroganoff


this is a delicious low-fat version of stroganoff. it comes from cooking light magazine.

  1. Combine broth
  2. Water
  3. Onion
  4. Mustard
  5. Thyme
  6. Salt
  7. Pepper
  8. Garlic and mushrooms in a skillet
  9. Bring to a boil
  10. Cover
  11. Reduce heat and simmer for 5 minutes
  12. Arrange chicken in a single layer in the skillet
  13. Cover
  14. And simmer for 15 minutes
  15. Remove chicken from skillet
  16. Cut into smaller pieces
  17. And keep warm
  18. Bring liquid left in skillet to a boil and cook
  19. Uncovered
  20. For 15 minutes or until reduced to 1 / 2 cup
  21. Remove from heat and let cool slightly
  22. Stir in sour cream
  23. Return chicken and juices to skillet
  24. Turning chicken to coat
  25. Serve with noodles
