Steps

  1. Combine mustard and onions in a bowl
  2. In another bowl
  3. Combine breadcrumbs and parsley
  4. Toss chicken chunks in mustard mixture
  5. Coat chicken chunks with bread crumb mixture
  6. Line a baking sheet with foil and coat the foil with nonstick cooking spray
  7. Thread chicken onto metal or soaked wooden skewers
  8. Leave a small space between the chunks
  9. Place the skewers on the prepared baking sheet
  10. Bake uncovered at 450 degrees for 6 - 8 minutes or until the juices run clear
