dijon catfish w crunchy honey mustard pretzel crust


i love fish this way, and i'm not a fish eater. but this recipe just works for me! for serious mustard fans! happy to share!

  1. Rinse fish with cold water
  2. Pat dry with papertowels
  3. In small bowl
  4. Whisk together egg
  5. Mustard
  6. Milk
  7. And pepper until smooth
  8. Pour mixture into a shallow dish or pie pan
  9. One at a time
  10. Lightly coat fish filets with flour
  11. Shaking off excess
  12. Dip each in mustard mixture coating both sides
  13. Dip each in pretzel crumbs to coat both sides
  14. Pressing if necessary so the coating sticks to the fish
  15. Set each on a small cookie sheet ready to fry
  16. In large skillet
  17. Cook fish in hot oil over medium heat for 3-4 minutes per side or until golden and fish flakes easily with a fork
  18. Serve with lemon slices if desired
  19. 4 servings
