dijon caper chicken and pasta sauce

Desciption

after trying an old dijon recipe; i came up with one of our family favorites. i added capers and peas. my family loves it and i get great reviews everytime i serve this dish. it can also be used as a pasta sauce.

Steps

  1. Melt butter or olive oil in a large skillet
  2. Add chicken breasts and cook until done and lightly browned
  3. About 20 minutes
  4. Remove chicken to a warm serving platter
  5. Stir flour into pan drippings in skillet
  6. Cook for 1 minute
  7. Add the chicken broth
  8. Half and half
  9. Stir and cook until the sauce thickens and bubbbles
  10. Add in mustard
  11. Capers and frozen peas
  12. Return chicken to skillet
  13. Cover and heat for 10 minutes
  14. Garnish with tomatoes and sprinkle with parsley
  15. We typically serve with tortolini or other pasta and cover with extra dijon sauce
