  1. Tomato salsa:
  2. In a bowl
  3. Mix all the ingredients together
  4. Set aside
  5. Scallops and clams:
  6. In a large pot with half of the butter and olive oil
  7. Cook garlic until golden
  8. Add the leeks and mushrooms
  9. Saut for 2-5 minutes
  10. Season with black pepper
  11. Pour in whiskey
  12. Flamb
  13. Add white wine and clam juices or fish stock
  14. Reduce to half
  15. Heat a heavy bottom skillet
  16. Add the remaining butter and olive oil
  17. Season the scallops with salt
  18. Sear the scallops
  19. Set aside
  20. Place the clams in the pot
  21. When the liquid has returned to a boil
  22. Remove from heat
  23. Stir in crme fraiche
  24. Assembly
  25. To plate
  26. Serve 3 scallops
  27. 4 clams per person
  28. Garnish with tomato salsa
  29. Warm crusty bread is a delicious accompaniment for soaking up the juices !
