this is one of our favorites. the first time i made them, i did not let them simmer long enough. they will be falling off the bone when they are done. if you need to add liquid, add beef broth as too much beer will give it a bad taste.

whenever i refer to this jambalaya, i call it brown as opposed to the red creole jambalaya. prepare all the ingredients the night before, ready to throw it together. once cooked it can be frozen for future use.
