  1. In large bowl
  2. Mixflours
  3. Splenda
  4. Baking powder
  5. Cinnamon
  6. Baking soda and salt
  7. In another bowl
  8. Whisk together egg
  9. Milk
  10. Oil
  11. Lemon rind and juice
  12. Stir into flour mixture
  13. Stirring just until alldry ingredients are moistened
  14. Fold in cranberries
  15. Spoon into greased muffin tins
  16. Bake at 400 for 20 minutes or until done
