  1. In a large pot bring the broth
  2. Celery
  3. Onion
  4. And enchilada sauces to a boil
  5. Whisk in the pumpkin
  6. Add corn and raw chicken and cover the pot tightly with a lid
  7. Turn the oven burner off
  8. And let the pot sit
  9. Covered
  10. For one hour
  11. Do not take the lid off ! do not peek ! the chicken needs to cook fully
  12. Taste the soup
  13. Add a dash or more hot sauce
  14. Salt
  15. And / or taco seasoning
  16. Serve and
  17. If you like
  18. Top with shredded cheese and / or crushed chips
