Steps

  1. Preheat grill to high
  2. Brush 1 tablespoon oil lightly over lamb on both sides
  3. Season with salt and pepper
  4. Set aside
  5. Combine 1 / 4 cup oil
  6. Onion and mustard in a small
  7. Heavy saucepan
  8. Bring to a boil
  9. Stirring
  10. Reduce heat to low and simmer gently until the onion is soft
  11. About 10 minutes
  12. Stirring frequently
  13. Use water to thin mixture to sauce consistency
  14. Add sugar if sauce is too tart
  15. Remove from heat and cover to keep warm
  16. Oil grill grate
  17. Grill chops to desired degree of doneness
  18. Turning with tongs
  19. 6-8 minutes per side for medium
  20. Transfer chops to plate and spoon sauce on top
