diabetic shrimp scampi


this is a wonderful shrimp scampi that i learnt from an italian cook who introduced me in making diabetic foods. my father is very ill with diabetis and loves his foods (of course) this recipe as a "hit" with dad. a tasty blend of shrimp and garlic.

  1. Directions
  2. Heat butter and oil in large non-stick skillet over high heat
  3. When butter starts to brown
  4. Add garlic
  5. Lower heat
  6. Cook 1 minute
  7. Stirring to prevent garlic from overbrowning
  8. Add shrimp
  9. Cook 2 minutes
  10. Stirring occasionally
  11. Add wine
  12. Lemon juice
  13. Salt and pepper
  14. Cook 2 minutes or until shrimp are cooked through
  15. Stir in bread crumbs and parsley
  16. Serve immediately
