diabetic grape nuts bars


i made these for my baci ("grandmother" in polish) because she has to watch her blood sugar. loving her with all my being makes me worry about her well-being. i decided to try this recipe (and another oatmeal bar recipe) and give her an alternative to eating baked goods for a "quick fix." she preferred the other recipe and recommends this recipe to those who like grape nuts. she says the bars reminded her of grape nuts pudding.

  1. Preheat oven to 350 f
  2. "optional: you dont have to do this
  3. But i boiled water and added the raisins in order to plump them and remove any surface sugars"
  4. Mix all ingredients together
  5. Pour into a non-stick 9 inch square baking dish
  6. Bake for 35 minutes or until firm
  7. Cool and cut into 12 squares
  8. Various spices can also be added: nutmeg
  9. Allspice
  10. Cinnamon
  11. Ginger
  12. Clove
  13. Lemon and orange peel
  14. You can add other extracts or spices such as: 1 / 2- 1 tsp
  15. Or combination of: coconut
  16. Banana
  17. Almond extracts
  18. Cocoa powder
  19. Cinnamon
  20. Nutmeg
  21. Allspice
  22. Ginger
  23. Clove
  24. Lemon and orange peel
  25. These bars keep well in the freezer and are excellent for traveling
