chicken strips in a tangy sauce with cashews and green onions are served over brown rice. 3/4 cup of chicken mixture and 1/2 cup brown rice= 1 serving.

  1. Combine chicken strips
  2. Orange juice
  3. And 1 teaspoon cornstarch in a medium bowl
  4. Cover and chill 1 hour
  5. Heat oil in a nonstick skillet over medium heat
  6. Add cashews
  7. Cook
  8. Stirring constantly
  9. 30 seconds
  10. Remove from skillet
  11. Set aside
  12. Add chicken mixture to skillet
  13. Cook
  14. Uncovered
  15. Over medium-high heat 8 minutes or until chicken is lightly browned
  16. Stirring constantly
  17. Add water chestnuts and next 3 ingredients
  18. Cook 5 minutes
  19. Combine broth
  20. Soy sauce
  21. And 1 tablespoon cornstarch
  22. Add to chicken mixture
  23. Bring to a boil
  24. Reduce heat
  25. And cook
  26. Stirring constantly
  27. Until thickened
  28. Remove from heat
  29. Stir in oranges
  30. Spoon chicken mixture over rice
  31. And sprinkle with cashews
  32. Serve immediately
