Steps

  1. ~cake~
  2. Preheat oven to 325 degrees
  3. Spray 15
  4. 5 x 10
  5. 5 inch jelly-roll pan with nonstick cooking spray
  6. Line with parchment or waxed paper
  7. And lightly spray paper with nonstick spray
  8. In small bowl
  9. Beat egg whites until soft peaks form
  10. Gradually add 2 tablespoons sugar
  11. Continue to beat until stiff
  12. In large bowl
  13. Beat egg yolks
  14. 1 tsp sweet-n-low
  15. And remaining 2 tablespoons of granulated sugar until thick and lemon colored
  16. Add water and vanilla
  17. Mixing well
  18. Add flour
  19. 3 tablespoons cocoa
  20. Baking powder and salt into egg yolk mixture
  21. Mixing well
  22. Gently fold egg whites into egg yolk mixture
  23. Spread batter into pan and bake for 12-15 minutes or until cake springs back when touched in center
  24. Immediately invert cake onto paper towels that have been sprinkled with 1 tablespoon of cocoa
  25. "remove waxed paper and
  26. Using the paper towels
  27. Roll intojelly roll shape"
  28. Completely cool rolled cake
  29. Seam side down
  30. ~filling~
  31. Mix coffee granules with hot water until completely dissolved
  32. In bowl
  33. Mix allfilling ingredients
  34. Including dissolved expresso
  35. With a blender until smooth
  36. Cover and refrigerate filling until ready to use
  37. ~~tomake the cream roll~~
  38. Unroll cake after it is completely cooled and spread with filling
  39. Roll cake back up without the towel
  40. "use a strainer to sprinkle cake with confectioners sugar"
  41. Refrigerate cake until ready to serve
