this is posted in response to a request for a stew that was low in fat, low in high-glycemic carbohydrates, and high in fibre. i think this fits the bill.

Steps

  1. Peel and chop the onions coarsely
  2. Chop the celery coarsely as well
  3. Peel and mince the garlic
  4. Saute the onions and celery until softened in the oil
  5. Remove them to a large stew pot
  6. Add the beef or lamb to the frying pan and cook until browned
  7. Stir in the garlic
  8. Then add the meat to the onions and celery
  9. Add the water or broth
  10. The barley and the bay leaves to the stew pot
  11. Peel and chop all the remaining vegetables into bite-sized pieces
  12. Add them to the stew in the order given
  13. Then add the tomatoes and the spices
  14. Simmer the stew until the meat is done and the vegetables and barley are tender
  15. Add a little more water if needed
  16. This can be made ahead
  17. Stew keeps and reheats well
