dhal puri


an interesting-looking flat bread from taste of the caribbean. use these as you might use chapatis or naan or other small flat breads.

  1. Sift dry ingredients into a bowl
  2. Add the water a little at a time
  3. And knead gently till a soft dough forms
  4. Continue kneading till supple
  5. But do not overwork dough
  6. Add oil to the dough and continue to knead till it is completely smooth
  7. Put the dough in a plastic bag or wrap in clear film
  8. Place in a cool room or in the refrigerator and leave to reast for at least 30 minutes
  9. Or overnight if possible
  10. To make the filling
  11. Put the split peas in a large pan
  12. Pour over water to cover and cook for about 10-15 minutes
  13. Till half cooked - they should be tender on the outside
  14. But still firm in the middle
  15. Allow water to evaporate during cooking
  16. Till pan is almost dry
  17. But add a little extra water to prevent burning if necessary
  18. Spread out the peas on a tray
  19. When cool
  20. Grind to a paste
  21. Using a mortar and pestle or food processor
  22. Mix with cumin and garlic
  23. Divide the dough into about 15 balls
  24. Slightly flatten each ball
  25. Put about 1 t of the split pea mixture into the center and fold over the edges
  26. Dust a rolling pin and board with flour and roll out the dhal puri
  27. Taking care not to overstretch the dough
  28. Till they are 7 inches in diameter
  29. Heat a little oil in a frying pan
  30. Cook dhal puri for 3 minutes on each side till light brown
  31. Serve as soon as last one is cooked
