deviled shrimp with bacon dip

i found this recipe in the pittsburgh tribune-review, as part of their special section of super bowl party recipes. it is originally from "great party dips," by peggy fallon (wiley, $16.95). it is an absolutely superb blend of shrimp, bacon, and cream cheese, with a bit of a kick provided by horseradish, cayenne, green onions, and parmesan cheese. serve with crackers or pita chips. great stuff.

Steps

  1. Heat oven to 375 degrees
  2. Chop shrimp coarsely
  3. In a large skillet
  4. Cook the bacon over medium heat until browned
  5. For 5 to 7 minutes
  6. Drain on paper towels
  7. Then chop finely
  8. In a medium-sized bowl
  9. Combine the cream cheese
  10. Mayonnaise
  11. All but 1 tablespoon of the parmesan cheese
  12. The horseradish
  13. Lemon juice
  14. And cayenne
  15. Mix until well blended
  16. Stir in the shrimp
  17. Bacon
  18. And green onions
  19. Scrape the mixture into a small gratin or other shallow baking dish
  20. Spreading into an even layer
  21. Sprinkle the remaining 1 tablespoon parmesan over the top
  22. Bake for 20 minutes
  23. Until the mixture is bubbly hot and the top is lightly browned
  24. Serve warm
  25. Right from the baking dish
  26. Makes about 2 cups
  27. Or 6 to 8 servings
