apple hills old fashioned apple pie


one of the vendor/growers, up in apple hill in camino california, sells these pies for a pretty penny so when i found the recipe posted in the local paper years ago, i made sure it was added to my recipe file since my sweet eddiebear always loved an apple pie. the recipe for recipe #237148 is posted seperately.

  1. Prepare crust recipe and chill for one hour
  2. While crust is chilling bring apple juice
  3. Sugars
  4. Cinnamon
  5. Nutmeg and cornstarch to a boil until thick
  6. Stirring constantly
  7. Add lemon juice and butter
  8. Save a little sauce to brush top of baked pie
  9. Toss with sliced apples
  10. Reserving tablespoon of sauce to brush on crust as pie comes from oven
  11. Roll out bottom crust
  12. Leaving a 1 inch overhang
  13. Fill pie
  14. Roll out top crust and place on top
  15. Trim to 1 / 2-inch overhang
  16. Crimp together and flute edge
  17. Remember
  18. The more time you spend preparing the crust
  19. The less spillage you are apt to have
  20. Use a knife to cut slits in crust for air vents
  21. Brush crust with milk
  22. Sprinkle with tablespoon of sugar and dash of cinnamon
  23. Bake at 375 degrees fahrenheit for 1 hour
  24. Or until a knife can be inserted into pie smoothly
  25. Brush with the tablespoon of reserved sauce
