  1. Heat oven to 375f
  2. Prick sweet potatoes with a fork to allow steam to escape
  3. Bake for 35 to 45 minutes or until fork tender
  4. Cut thin lenghwise slice from top of each sweet potato
  5. Scoop out inside
  6. Leaving a thin shell
  7. Set shells aside
  8. In large mixer bowl place hot sweet potatoes and remaining ingredients
  9. Except apple
  10. Chopped pecan and pecan halves
  11. Beat at medium speed
  12. Scraping bowl often until well mixed and no lumps remain
  13. By hand
  14. Stir in apple and chopped pecans
  15. Place shells on a 15x10x1" baking pan
  16. Fill shells with sweet potato mixture
  17. If desired
  18. Garnish each potato with pecan halves
  19. Bake for 15 to 20 minutes or until heated through
  20. Spoon hot sweet potato mixture into serving bowl
  21. If desired toast pecan halves and use to garnish sweet potato mixture
