found this recipe in november 1996 family circle. will be making this up this year to include in some christmas baskets for our teachers at the local school. i like this recipe because it can be canned or frozen and will last up to six months that way, or can be refrigerated and will last up to a month. needless to say, i will be canning mine for the gift baskets, but am hoping to make enough so that i can keep some for myself in the fridge.

Steps

  1. Peel and core apples
  2. Reserve peels and cores
  3. Combine peels
  4. Cores and 2 cups cider in saucepan
  5. Bring to boiling over high heat
  6. Reduce heat to low
  7. Cover and simmer 30 minutes
  8. Press mixture through food mill or sieve
  9. To extract juice
  10. Reserve juice
  11. Discard peels and cores
  12. Meanwhile
  13. Combine apples with sugar
  14. Cinnamon stick and remaining 1 / 2 cup cider in large nonaluminum saucepan
  15. Bring to boiling over medium heat
  16. Reduce heat to low
  17. Cover and simmer
  18. Stirring occasionally
  19. For 20 to 40 minutes or until apples begin to fall apart
  20. Add reserved juice to apples
  21. Bring to boil
  22. Reduce heat
  23. Simmer uncovered
  24. Stirring occasionally
  25. 45 to 60 minutes or until thick
  26. Discard cinnamon stick
  27. Stir in pumpkin
  28. Heat oven to 300 degrees
  29. Pour mixture into large
  30. Shallow roasting pan
  31. With oven door slightly ajar
  32. Bake
  33. Stirring every 15 minutes
  34. For 1 to 1 1 / 2 hours
  35. Or until thick enough to spread
  36. Spoon into sterilized 1 / 2 pint canning jars
  37. Leaving 1 / 2 inch headspace
  38. Wipe rims and threads clean
  39. Top with hot lids
  40. Screw bands on firmly
  41. Process in boiling water bath 5 minutes
  42. Remove to wire rack to cool completely
  43. Store in cool
  44. Dark place up to 6 months
