another quick shrimp and chorizo paella

  1. Preheat oven to 400f warm oil in a dutch oven over medium-high heat
  2. Add chorizo and saut until it starts to brown
  3. 5 minutes
  4. Add onion and garlic
  5. Saut for 2 minutes
  6. Stir in soup mix
  7. Paprika and rice
  8. Stir well to coat rice in soup mix
  9. Cook for about 1 minute
  10. Pour in broth and bring to a boil
  11. Stir in tomatoes
  12. Bring mixture to a simmer
  13. Then cover pot with a tightfitting lid
  14. Transfer to oven and bake for 15 minutes
  15. Add peas and shrimp
  16. Cook for 5 minutes more
  17. Remove from oven and let rest for 10 minutes before removing lid
  18. Fluff rice with a fork and season with pepper to taste
  19. Serve immediately
