Steps

  1. For the cupcakes:
  2. Line muffin cups with paper liners
  3. Place an oven rack in the center of the oven and preheat to 325 degrees f
  4. Combine the unsweetened chocolate and water in a small saucepan over medium-low heat
  5. Stir constantly until the chocolate is melted
  6. About 2 minutes
  7. Cool for 2 minutes
  8. Whisk in the mascarpone cheese until the mixture is smooth
  9. Beat the sugar
  10. Oil
  11. Eggs
  12. And vanilla in a large bowl for 30 seconds
  13. Stir in the mascarpone mixture
  14. Whisk the flour
  15. Baking soda
  16. Salt
  17. Baking powder
  18. And chocolate chips in a medium bowl
  19. Add the dry ingredients to the chocolate mixture
  20. Stir until just blended
  21. Divide the batter among the prepared muffin pans
  22. Bake for 20 to 25 minutes or until a tester inserted into the center of a cupcake comes out with no crumbs attached
  23. Cool the cupcakes completely before dipping
  24. About 1 hour
  25. For the ganache:
  26. Place the chocolate chips in a small bowl
  27. Combine the heavy cream and vanilla extract in a small saucepan over medium-low heat
  28. Cook until small bubbles appear on the outside edge of the cream
  29. Pour the hot cream mixture over the chocolate chips
  30. Using a fork
  31. Gently stir until all the chocolate is melted and the mixture is smooth
  32. Dip the tops of each cupcake in the ganache and transfer to a baking sheet
  33. Place the dipped cupcakes in the refrigerator to set
  34. About 15 to 20 minutes
  35. Allow cupcakes to return to room temperature before serving
  36. "cooks"
