  1. Place dates in a food processor
  2. Puree until it forms a thick paste
  3. Add cocoa powder
  4. Chia seeds
  5. And vanilla extract
  6. Pulse until all ingredients are combined
  7. Add almonds
  8. Pulse until nuts are finely chopped and well distributed throughout
  9. Spread large sheet of wax paper on work surface
  10. Transfer date mixture to wax paper and use paper to press mixture into a 1 / 2" thick rectangle
  11. Wrap tightly and chill overnight
  12. Unwrap block and cut into 8 bars
  13. Re-wrap each bar in wax paper
