similar to zingerman's yummy loaf...a not-too-sweet bread studded with bits of bittersweet chocolate and dried cherries. add some toasted pecan pieces for some extra crunch, or leave them out; your choice. prep time does not include 2 to 3 hours of rising time.

Steps

  1. In cup
  2. Combine warm water
  3. Yeast
  4. And 1 teaspoon granulated sugar
  5. Stir to dissolve
  6. Let stand until foamy
  7. About 5 minutes
  8. Meanwhile
  9. In large bowl
  10. Combine 3 cups flour
  11. Cocoa
  12. Brown sugar
  13. And salt
  14. With wooden spoon
  15. Stir warm coffee
  16. Butter
  17. Egg yolk
  18. And yeast mixture into flour mixture
  19. In bowl
  20. With floured hands
  21. Knead several times to combine well
  22. Turn dough onto lightly floured surface and knead until smooth and elastic
  23. About 10 minutes
  24. Working in enough of remaining 1 / 2 cup flour just to keep dough from sticking
  25. Knead in cherries and chocolate pieces
  26. Shape dough into ball
  27. Place in greased large bowl
  28. Turning dough to grease top
  29. Cover bowl with plastic wrap and let rise in warm place until doubled in volume
  30. About 1 hour 30 minutes
  31. Punch down dough
  32. Turn dough onto lightly floured surface and cut in half
  33. Cover dough and let rest 15 minutes for easier shaping
  34. Shape each dough half into 5-inch ball : using the sides of your hands
  35. Tuck sides of dough under to meet in center
  36. Rotate and repeat to form taut ball
  37. Place balls
  38. 3-inches apart
  39. In opposite corners of ungreased large cookie sheet
  40. Cover and let rise in warm place until doubled
  41. About 1 hour
  42. Preheat oven to 400 degrees f

  44. Beat reserved egg white with water
  45. Use to brush tops of loaves
  46. Sprinkle loaves with remaining 2 teaspoons granulated sugar
  47. With serrated knife or single-edge razor blade
  48. Cut shallow x in top of each loaf
  49. Bake until loaves are crusty
  50. About 25 to 30 minutes
  51. Or until an instant read thermometer reads 185f tent loosely with foil after 20 minutes
  52. If the loaves are browning too much
  53. Transfer to wire racks to cool
