chocolate cherry and oatmeal cookies

Desciption

a chewy, crispy cookie from the may 2007 cooking light magazine. the original called for white chocolate chips instead of semi-sweet and strawberries instead of cherries. the dough is very heavy, so you should use a stand mixer if possible.

Steps

  1. Preheat oven to 350
  2. Lightly spoon flour into a measuring cup
  3. Level with a knife
  4. In a small bowl
  5. Combine flour
  6. Oats
  7. Baking soda and salt
  8. Stir to combine
  9. Cream butter and sugar
  10. Add vanilla and egg
  11. Then beat well
  12. Gradually add the flour mixture
  13. Beating until blended
  14. Add cherries and chocolate chips
  15. Stirring until blended
  16. Drop dough by tablespoonfuls 2 inches apart on a baking sheet coated with cooking spray
  17. Bake at 350 for 12 minutes
  18. Or until lightly browned
  19. Remove from oven
  20. Cool on pan for one minute
  21. Cool cookies completely on racks
