  1. To toast the almonds
  2. Heat the oven to 350f
  3. Spread the almonds in a thin layer in a shallow baking pan
  4. Bake 5 to 8 minutes
  5. Stirring occasionally
  6. Until light golden brown
  7. Cool before using
  8. Beat egg yolks and 2 cups cream in a large bowl on low to medium speed of mixer
  9. The set aside
  10. Stir together sugar and cocoa in a large saucepan
  11. Gradually stir in the egg yolk mixture
  12. Cook over medium heat
  13. Stirring constantly
  14. Until the mixture is very hot
  15. Do not boil !
  16. Remove from heat and cool to room temperature
  17. Stir the remaining 4 cups cream
  18. Almond extract and vanilla into the chocolate mixture
  19. Blending well
  20. Cover and refrigerate mixture at least 6 hours
  21. Pour the chocolate mixture in your ice cream maker or a suitable piece of tupperware
  22. Immediately fold in cherries and almonds
  23. Freeze for several hours or overnight
