Steps

  1. Wash strawberries and pat dry
  2. Place on paper towels until they reach room temperature
  3. Mash cheesecake with a mixer until the graham cracker crust in mixed throughout
  4. Cheesecake mixture should be soft and workable
  5. Like a cookie dough
  6. With your fingers
  7. Pick up a small ball of cheesecake and press against the strawberry
  8. Leaving the stem and leaves visible
  9. Bottom 1 / 2 to 2 / 3 of the strawberry should be covered with the cheesecake
  10. Set aside on waxed paper
  11. May need to be chilled until ready to dip
  12. Melt chocolate chips
  13. Corn syrup and butter in a double boiler
  14. Stirring occasionally
  15. Remove from heat and dip each cheesecake-covered strawberry into chocolate
  16. Coating of strawberry
  17. Allow excess chocolate to drip off
  18. Then return strawberry to the waxed paper covered baking pan or cookie sheet
  19. Refrigerate until set
  20. About 15-20 minutes
  21. Strawberries should be stored in refrigerator until ready to serve
