chocolate cheesecake squares


a lower-fat recipe from everyday food january/february 2004. allow extra time to cool and chill.

  1. Preheat oven to 325f
  2. Coat an 8" square baking pan with cooking spray
  3. Line with two crisscrossed pieces of parchment or wax paper
  4. Spraying between sheets
  5. Spray lined pan
  6. Set aside
  7. Process cookies in a food processor until finely ground
  8. Press crumbs into bottom of prepared pan
  9. Blend cream cheese and sour cream in food processor until smooth
  10. Add cocoa
  11. Cornstarch
  12. Sugar
  13. Egg
  14. And egg white
  15. Process until smooth
  16. Pour into pan
  17. Sprinkle with chocolate chips
  18. Bake until just set
  19. 35-40 minutes
  20. Cool completely in pan
  21. Refrigerate at least 1 hour
  22. Invert onto a tray
  23. Peel off paper
  24. And reinvert crust side down
  25. Cut in 9 squares

dh and i enjoyed this flavorful, easy to make recipe from the january 2009 bon appetit. carbonnade is a belgian beef stew flavored with beer, onions, and brown sugar. bon appetit substituted chicken thighs for this twist on an old favorite. serve over eg beer  and onion braised chicken carbonnade
