Steps

  1. Preheat oven to 350 degrees f
  2. Line an 8-inch square baking dish with foil
  3. For the crust: process the chocolate wafers in a food processor with the butter
  4. Sugar
  5. Coffee and salt until fine
  6. Evenly press the crust into the prepared dish covering the bottom completely
  7. Bake until the crust sets
  8. About 15 minutes
  9. Meanwhile
  10. Make the filling: put the chocolate in a medium microwave-safe bowl
  11. Heat at 75 percent power until softened
  12. About 2 minutes
  13. Stir
  14. And continue to microwave until completely melted
  15. Up to 2 minutes more
  16. Blend the cream cheese
  17. Sugar and sour cream together in the food processor until smooth
  18. Scrape down the sides
  19. As needed
  20. Add the eggs and pulse until just incorporated
  21. With the food processor running
  22. Pour the chocolate into the wet ingredients and mix until smooth
  23. Pour the filling evenly over the crust
  24. Bake until filling puffs slightly around the edges
  25. But is still a bit wobbly in the center
  26. 25 to 30 minutes
  27. Cool on a rack
  28. For the glaze: put the chocolate
  29. Butter and corn syrup in microwave safe bowl
  30. Heat glaze in the microwave at 75 percent power until melted
  31. About 2 minutes
  32. Stir the ingredients together until smooth
  33. Add the sour cream
  34. Spread glaze evenly over the warm cake and scatter the crushed candy canes over top
  35. Cool completely
  36. Then refrigerate overnight
  37. Cut into small bars or squares
  38. Serve chilled or room temperature
  39. Store cookies covered in the refrigerator for up to 5 days
  40. "cooks"
  41. Use a rolling pin to roll and break the candy up into small pieces
  42. About 1 / 4 inch or so
  43. Makes 16 2 inch squares
