cashew's and chocolate -- how can you go wrong?

  1. Prepare pie crust for one-crust filled pie using 9-inch pie pan
  2. Heat oven to 325 f
  3. In large bowl
  4. Combine corn syrup
  5. Sugar
  6. Margarine
  7. Vanilla and eggs
  8. Beat with wire whisk until well blended
  9. Reserve 2 tablespoons chocolate chips for topping
  10. Stir in remaining chocolate chips and cashew halves
  11. Spread evenly in crust-lined pan
  12. Bake at 325 f
  13. For 45 to 55 minutes or until pie is deep golden brown and filling is set
  14. Cover edge of crust with strips of foil after 15 to 20 minutes of baking to prevent excessive browning
  15. Cool 2 hours or until completely cooled
  16. Eanwhile
  17. Line cookie sheet with waxed paper
  18. In small saucepan
  19. Melt reserved 2 tablespoons chocolate chips over low heat
  20. Dip each whole cashew in chocolate
  21. Place on lined cookie sheet
  22. Refrigerate 15 to 20 minutes or until chocolate is set
  23. Garnish pie with whipped cream and chocolate-dipped cashews
  24. Store in refrigerator
  25. To flavor whipped cream
  26. Fold in sweetened cocoa mix
  27. Grated citrus peel
  28. Spices or a favorite liqueur
