  1. Separate egg
  2. Set egg yolk aside
  3. Cover and chill egg white until needed
  4. Stir together flour
  5. Cocoa powder
  6. And salt
  7. Set aside
  8. In large bowl
  9. Beat butter with electric mixer on medium to high speed for 30 seconds
  10. Add sugar
  11. Beat until combined
  12. Beat in egg yolk
  13. Milk
  14. And vanilla
  15. Beat in as much of the flour mixture as you can with mixer
  16. Stir in any remaining flour mixture
  17. Cover and chill about 2 hours or until dough is easy to handle
  18. Preheat oven to 350f in small saucepan
  19. Cook and stir caramels and whipping cream over low heat until mixture is smooth
  20. Set aside
  21. Slightly beat reserved egg white
  22. Shape dough into 1 inch balls
  23. Roll balls in egg white
  24. Then in pecans to coat
  25. Place balls 1 inch apart on greased cookie sheet
  26. Using your thumb
  27. Make indention in center of each cookie
  28. Bake about 10 minutes or until edges are firm
  29. Spoon melted caramel mixture into indentation
  30. Transfer cookies to wire rack
  31. Cool
  32. In another small saucepan
  33. Combine chocolate chips and shortening
  34. Cook and stir over low heat until melted
  35. Cool slightly
  36. Drizzle cookies with chocolate mixture
  37. Let stand until chocolate is set
