  1. In a mixing bowl cream butter and sugar
  2. Beat in egg yolk
  3. Vanilla
  4. And milk
  5. Combine flour
  6. Cocoa
  7. And salt
  8. Add to creamed mixture
  9. Refrigerate 1 hour or until easy to handle
  10. Roll dough into 1 inch balls
  11. Beat egg white
  12. Dip balls into egg white and roll in the nuts
  13. Place 2 inches apart on greased cookie sheets
  14. Make a 3 / 8 - 1 / 2 inch indentation in the center of each ball with the end of a wooden spoon
  15. Bake at 350 for 10-12 minutes
  16. Remove to cool on wire racks
  17. In a heavy saucepan
  18. Melt caramels with cream over low heat
  19. Stir until smooth
  20. Using 1 / 2 tsp caramel mixture
  21. Fill each cookie
  22. Melt chocolate chips and shortening in microwave
  23. Drizzle over cookies
