Steps

  1. Seperate egg
  2. Cover and chill egg white until needed
  3. Set egg yolk aside
  4. In a large bowl
  5. Beat butter with an electric mixer for approx 30 seconds
  6. Add sugar and beat well
  7. Beat in the egg yolk
  8. Milk and vanilla until combined
  9. In a med bowl stir together flour
  10. Cocoa and salt
  11. Add flour mix to butter mixture and beat until well mixed
  12. Cover and chill approx 2 hours
  13. Preheat oven to 350
  14. Lightly grease cookie sheets
  15. In a small saucepan combine caramels and whipping cream
  16. Heat and stir over low-medium heat until mixture is smooth
  17. Set aside
  18. In a shallow dish beat the egg white
  19. Place chopped pecans on another plate
  20. Shape the dough into one inch balls and roll in egg white and then into pecans
  21. Place on baking sheet approx 1 inch apart
  22. Using your thumb make an indent in each cookie
  23. Bake 10 to 15 minutes until edges are firm
  24. Original recipe says 10 minutes but mine took 15
  25. Remove from oven and spoon a bit of the caramel sauce into each cookie transfer to wire racks to cool
  26. In a small saucepan melt the chocolate and the shortening together and then drizzle on top of each cookie
  27. Makes approx 36 cookies
  28. I made mine slightly bigger so it made less
