chocolate caramel cheesecake bites


these special mini desserts have all the taste of a rich, chocolate-covered cheesecake.

  1. Heat oven to 350
  2. Line 8 inch square baking pan with double thickness of aluminum foil
  3. Extending foil over ends of pan
  4. Spray foil with no-stick cooking spray
  5. Combine all crust ingredients in small bowl
  6. Press onto bottom of prepared pan
  7. Combine caramels and half & half in medium microwave-safe bowl
  8. Microwave on high 1 minute
  9. Stir
  10. Continue microwaving 30 seconds
  11. Stir until smooth
  12. Pour over crust in pan
  13. Sprinkle with pecans
  14. Refrigerate while preparing cream cheese mixture
  15. Combine cream cheese and sugar in medium bowl
  16. Beat at medium speed
  17. Scraping bowl often
  18. Until creamy
  19. Add egg and vanilla
  20. Beating just until combined
  21. Stir in sour cream
  22. Pour over caramel mixture
  23. Bake for 35 to 40 minutes or until just set 2 inches from edges of pan
  24. Cool on wire rack for 1 hour
  25. Loosely cover
  26. Refrigerate at least 4 hours
  27. Use foil to lift cheesecake from pan
  28. Cut into 36 squares
  29. Place cooling rack over large piece of waxed paper on counter
  30. Combine chocolate chips and shortening in 1 quart saucepan
  31. Cook over low heat
  32. Stirring constantly
  33. Until smooth
  34. Pierce each cheesecake square with fork
  35. Spoon chocolate over top and sides of each cheesecake square
  36. Letting excess chocolate drop back into pan
  37. Place onto cooling rack
  38. Let stand about 20 minutes or until chocolate is firm
  39. Store refrigerated
