chocolate cake with ganache and praline topping


i found this one in bon appetit's july '09 issue and i'm posting it for my friend chef #1072593 cause she loves these praline cakes so much. she's got me dying to make one but i haven't gotten to it yet. so this one's for chef #1072593 note: prep time is cooling time.

  1. To make the cake:
  2. Preheat oven to 350
  3. Spray a 9 inch cake pan with non-stick spray
  4. Line with parchment paper
  5. Spray parchment
  6. Dust with flour
  7. Tapping out any excess
  8. Place butter and cocoa powder in medium bowl
  9. Pour 1 / 2 cup boiling water over
  10. Stir
  11. Let stand 2 minutes
  12. Whisk until blended
  13. Whisk flour
  14. Sugar
  15. Baking soda
  16. And coarse salt in another medium bowl
  17. Whisk buttermilk
  18. Egg
  19. And vanilla in another large bowl
  20. Gradually whisk cocoa mixture into buttermilk mixture
  21. Whisk until smooth
  22. Add flour mixture in 3 additions
  23. Whisking to blend between additions
  24. Pour batter into prepared pan
  25. Bake cake until tester inserted in center comes out clean
  26. About 30 minutes
  27. Cool in pan 10 minutes
  28. Run knife around pan edges to release cake
  29. Invert onto rack
  30. Remove pan and parchment
  31. Cool completely
  32. To make the ganache:
  33. Place chocolate and cream in microwave-safe bowl
  34. Heat in microwave in 15 second intervals
  35. Stirring occasionally
  36. Until melted and smooth
  37. Stir in butter
  38. Let stand until spreadable
  39. About 30 minutes
  40. Spread over top and sides of cake
  41. Chill 2 hours or up to 1 day
  42. To make the praline:
  43. Stir first 3 ingredients in heavy large saucepan over medium-high heat until butter melts
  44. Boil 1 minute without stirring
  45. Remove from heat
  46. Whisk in sugar and vanilla
  47. Add pecans
  48. Stir just to incorporate
  49. Quickly pour praline mixture over cake
  50. Spread just to edges
  51. Can be made a day ahead
  52. Cover with cake dome and store at room temperature
