Steps

  1. Preheat oven to 350f
  2. In a big bowl whisk together flour
  3. Cocoa
  4. Soda
  5. Salt and guar gum
  6. In another bowl combine sugar
  7. Soy milk
  8. Vanilla
  9. Dissolve coffee powder in 2 tbsp boiling water
  10. And add
  11. Mix in oil
  12. Stir to blend
  13. Add wet ingredients to dry
  14. Mix well
  15. Quickly stir in vinegar and transfer to a non-stick baking pan
  16. Bake 20-22 minutes
  17. Then make the coconut toppping: combine all ingredients in a sauce pan
  18. Bring to a boil
  19. Stirring constantly 1-2 minutes
  20. Pour over the cake and bake additionally 5 minutes
  21. Or until coconut mixture starts to bubble a lot
  22. Let cool before serving
