  1. Preheat the oven to 190 c / 375f
  2. Grease and flour a 20 cm cake tin
  3. Combine the flour
  4. Sugar
  5. Cocoa powder
  6. Bicarbonate of soda and salt
  7. Make a well in the centre of the mixture
  8. And add the vanilla essence
  9. Vinegar and oil
  10. Then gradually stir in the water
  11. Continue stirring until thoroughly blended
  12. But do not over-mix
  13. Pour all of the batter into the cake tin
  14. And bake
  15. Uncovered
  16. For 35 to 40 minutes
  17. Or until a toothpick inserted into the centre of the cake
  18. Comes out clean
  19. Do not over bake
  20. The secret to this cake is its moistness
  21. Cool in the tin on a wire rack for 10 minutes
  22. Then transfer the cake from the tin to the rack
  23. To cool completely
  24. Sift the icing sugar over the top
  25. And serve
