this recipe is based on one from sunset magazine (oct 1997, although the original used instant rice so this new one is quite different), and is absolutely wonderful! darn easy, too. :) easily converted to vegetarian, as well.
the inspiration for this recipe comes from an avocado dessert i grew up eating. (in the philippines, ripe avocados are chopped or mashed and eaten in a bowl of milk with sugar and ice.) i had this last-minute idea of combining mascarpone cheese and avocad
i first had these when buddha first took me to his family's fishing spot on the lake. his aunt brenda makes these often. i loathed hush puppies before these. always thought them dry and bland. not these! wow are they yummy. thanks brenda!
