  1. In a large bowl
  2. Combine flour
  3. Sugars
  4. Baking powder and salt
  5. Add melted unsweetened chocolate
  6. Eggs
  7. Oil
  8. Juice
  9. Rum
  10. Peel and vanilla
  11. Stir to combine
  12. Add baking chips and nuts
  13. Mix until dough is well blended
  14. Quarter dough
  15. Shape into 4 logs
  16. Each about 2 1 / 2" wide by 14" long
  17. Place 2 logs on each of 2 lightly oiled baking pans
  18. Bake logs at 350 degrees just until firm to touch
  19. About 20 min
  20. Cool logs slightly in pans
  21. Using a serrated knife
  22. Cut diagonally into 1 / 2" wide slices
  23. Place slices cut side down on pans
  24. Bake until crisp
  25. About 15 min
  26. More
  27. Cool cookies
  28. Meanwhile
  29. In a double boiler
  30. Melt white chocolate and shortening over hot water
  31. Stirring until smoot h
  32. Dip 1 end of each cookie about 1" into white chocolate to coat
  33. Lay cookies on wire racks until firm
  34. Chill to speed process
  35. Serve
  36. Or wrap airtight to store up to 2 days
  37. Freeze for longer storage
