Steps

  1. Preheat the oven to 350 degrees f
  2. Butter and flour a 9-inch layer cake pan
  3. Tap out the excess flour
  4. Melt the chocolate in the top of a double boiler over hot
  5. Not simmering
  6. Water
  7. Set aside to cool to lukewarm
  8. Beat the eggs and 3 / 4 cup sugar in a bowl until thick and lemon colored
  9. Fold the flour and melted chocolate into the batter
  10. A third at a time until just combined
  11. Stir in the almond extract
  12. Pour the batter into the cake pan and bake for about 45 minutes or until a cake tester inserted in center comes out clean
  13. Leave the cake in the pan for 5 minutes
  14. Then unmold it onto a wire rack
  15. When cake is cool
  16. Split it into 2 layers
  17. To make the frosting
  18. In a saucepan boil 1 / 2 cup sugar and 1 / 2 cup water until the sugar melts and the syrup is clear
  19. Cool to lukewarm
  20. In the bowl of an electric mixer set on medium speed
  21. Beat the egg yolks
  22. Adding the syrup in a slow
  23. Steady stream
  24. Until thick
  25. Continue beating for about 5 minutes or until the mixture has more than doubled in bulk
  26. In a clean bowl and using the electric mixer
  27. Beat the butter until light and creamy
  28. Add the butter to the yolk mixture
  29. A little at a time
  30. Spread the buttercream on one of the cake layers top with the other cake layer
  31. To decorate the cake
  32. Melt the bittersweet chocolate in the top of a double boiler over hot
  33. Not simmering
  34. Water
  35. Line a baking sheet with wax paper and spread the melted chocolate in a thin layer over the paper
  36. Freeze for about 15 minutes until the chocolate is brittle
  37. Brush the warmed
  38. Strained preserves over the top of the cake
  39. Crumple the wax paper to break the chocolate into pieces
  40. Scatter the broken chocolate over the top of the cake
  41. Spread the buttercream on top of apricot preserves
  42. And then write on the smooth surface with red or another color of decorating gel
