chocolate berries cake with mascarpone


i’ve prepared this fresh and moist cake many times adapting the ingredients to what is available. i hope you will like it as we do.

  1. Heat your oven at 160c (
  2. Mix butter
  3. Sugar
  4. Vanilla and salt until soft and smooth
  5. Add eggs one by one und mix until incorporated
  6. In a separate bowl mix together flour
  7. Baking powder and cocoa
  8. Add flour mix to egg mix and work until smooth
  9. Grease you baking mold and spread on it the batter
  10. Bake 25-30 minutes until through at 160c
  11. Let cool down
  12. In the meanwhile prepare your cream mixing together mascarpone
  13. Quark
  14. Sugar and lemon juice
  15. Spread the cream over the cake base with a spatula
  16. Prepare the glaze as described on the package (i use adding sugar and if you like the syrup
  17. Heat as decribed
  18. Let cool down 5 minutes
  19. Spoon or brush the glaze over the berries
  20. Let sit for 2 hours in the fridge
  21. Cut in pieces and serve
