  1. In a large pan of boiling water
  2. Boil the beetroots in the skins until tender when pierced with a knife
  3. 30-60 minutes
  4. Let cool and peel away the skins
  5. Preheat the oven to 180c
  6. 350f
  7. Gas4
  8. Butter a medium cake tin
  9. Sift the cocoa powder
  10. Flour and baking powder into the bowl
  11. Add the sugar and set aside
  12. Puree or finely grate the beetroot
  13. In a large bowl
  14. Whisk together the beetroot
  15. Eggs
  16. 2 tsp vanilla and oil
  17. Fold in the dry ingredients to just combine
  18. Pour the mixture into the prepared tin and bake 50 minutes
  19. Or until a skewer inserted in the middle comes out clean
  20. Cool 20 minutes in the pan
  21. Then remove to a wire rack
  22. To make the frosting
  23. Melt the chocolae in a bowl set over boiling water
  24. Whisk together the chocolate
  25. Cream cheese
  26. 0
  27. 5tsp vanilla and 50g butter
  28. Spread on the cake
