Steps

  1. Preheat the oven to very slow
  2. Grease an oven tray
  3. Trace four 10cm circles onto baking powder
  4. Place the paper
  5. Marked side down on a tray
  6. Beat the egg whites in a small bowl with an electric mixer until soft peaks form
  7. Gradually add the sugar
  8. Beating between each addition
  9. Then gently fold in the cocoa
  10. Once you have prepared the meringue mixture
  11. It is essential that you bake it immediately
  12. Otherwise it is prone to collapsing
  13. Spread the meringue mixture inside the circles on the prepared tray
  14. And bake in the oven for about 45 minutes or until the meringues are firm
  15. Cool the meringues in the oven with the door ajar
  16. Meanwhile whisk the cream cheese
  17. Cream and sifted icing sugar in a small bowl
  18. Until combined
  19. Top the meringues with the cream cheese mixture and banana slices
  20. Combine the extra sugar and the water in a small
  21. Heavy-based pan and stir over a low heat
  22. Without boiling
  23. Until the sugar dissolves
  24. Then bring to the boil
  25. Reduce the heat and simmer
  26. Uncovered
  27. Without stirring
  28. Until the mixture is golden brown
  29. Remove from the heat
  30. And stand until the bubbles subside and the toffee runs evenly from the back of a spoon
  31. Drizzle the meringues with the toffee close to serving
