chocolate banana cupcakes with peanut butter frosting

  1. Preheat oven to 350 degree f
  2. Combine first three ingredients in a large bowl
  3. Mix well
  4. Add banana
  5. Stirring well to combine
  6. Lightly spoon flour into dry measuring cup and level with a knife
  7. Combine flour
  8. Cocoa
  9. Baking soda
  10. And salt
  11. Stirring well with a whisk
  12. Add flour mixture to sugar mixture alternately with 1 / 2 cup milk
  13. Beginning and ending with flour mixture
  14. Mix after each addition
  15. Spoon the batter into 24 muffin cups lined with paper liners
  16. Bake for 20 minutes or until cupcakes spring back easily when touched lightly in the center
  17. Allow to cool
  18. And frost if desired
  19. To make frosting: place the butter and peanut butter into a medium bowl
  20. And beat with an electric mixer
  21. Gradually mix in the sugar
  22. And when it starts to get thick
  23. Incorporate milk one tablespoon at a time until all of the sugar is mixed in and the frosting is thick and spreadable
  24. Beat for at least 3 minutes for it to get good and fluffy
