chocolate baklava


i love chocolate, and i adore baklava, and this is a sublime combination of the two. it involves a little work, so i make this for very special occasions.

  1. In a small skillet
  2. Melt butter over low heat
  3. Let stand a few minutes
  4. Skim off and discard white foam from top and do not use any milky residue that sinks to bottom
  5. The clear yellow liquid is clarified butter
  6. Preheat oven to 350f
  7. In a medium bowl
  8. Combine pecans
  9. Cinnamon
  10. 1 / 4 cup sugar
  11. And chocolate chips
  12. Mix well
  13. Open and stack phyllo sheets on a damp towel
  14. Cover with a damp towel to prevent drying out
  15. Brush a 12x18-inch sheet cake pan with clarified butter
  16. Layer half of phyllo sheets in pan
  17. Brushing each sheet with butter
  18. Spread half of nut mixture evenly over layered phyllo sheets
  19. Brush next phyllo sheet on both sides with butter
  20. Then place on top of nuts
  21. Add 5 or 6 more phyllo sheets
  22. Brushing each sheet with butter
  23. Top with the remaining nut mixture
  24. Butter next phyllo sheet on both sides and place on top of the nuts
  25. Top with remaining phyllo sheets
  26. Brushing each with butter
  27. Using a sharp knife
  28. Cut pastry into 50 diamond-shaped pieces
  29. Do not remove pastry from pan
  30. Brush top with remaining clarified butter
  31. Bake 40 to 50 minutes
  32. Or until golden
  33. About 30 minutes before baklava is finished baking
  34. In a small saucepan
  35. Combine remaining 1 / 2 cup sugar and orange juice
  36. Heat to boiling over medium heat
  37. Stirring often
  38. Reduce heat to medium-low and simmer 10 minutes
  39. Stir in vanilla
  40. Pour hot orange syrup over hot baklava as soon as it is removed from oven
  41. Let stand until cool
  42. 4 hours or overnight
  43. When baklava is cool
  44. Drizzle thin chocolate glaze on top
  45. Allow glaze to set up before serving
  46. Baklava may be kept
  47. Covered
  48. 4 to 5 days at room temperature
  49. Freeze for longer storage
  50. To make the thin chocolate glaze------------------
  51. In a small glass bowl
  52. Combine chocolate
  53. Butter
  54. And 1 tablespoon water
  55. Heat in the microwave on high 30 to 45 seconds
  56. Or until melted and smooth when stirred
