chocolate babka bread machine


who doesn't like chocolate? chocolate babkas seems to be where it is at! this comes out beautifully in the bread machine. the raisins can be omitted. soaking the raisins in rum, rose water or orange blossom water gives this an extra treat.

  1. Place biga ingredients in bread machine according to your manufacturers directions
  2. Start on dough cycle
  3. Let mix for 2 minutes then unplug and leave closed till the next morning
  4. Dough:
  5. The next morning add butter to biga which at this point should have collapsed
  6. Whisk well eggs
  7. Sugar and vanilla add to machine
  8. Top with flour
  9. Set machine for dough cycle
  10. At beep add raisins and zest
  11. Meanwhile mix filling ingredients together in a food processor and chill till ready
  12. Grease tube pan well and coat with cookie crumbs
  13. Preheat oven to 350 degrees
  14. When dough is done turn out on to a lightly floured work surface
  15. And punch it down to release the built up gases
  16. Roll out into a rectangle 8 by 14 inches
  17. Spread the filling then roll them up jellyroll style and pinch the seams to seal them
  18. Flatten the dough slightly with a rolling pin
  19. Then twist the dough 6 to 8 times
  20. Allow the dough to rest a few minutes
  21. Make spirals with the dough and place them in a greased tube pans
  22. Cover pan with a damp cloth
  23. And let rise in a warm place until almost doubled in volume
  24. About 30 to 60 minutes
  25. Bake the cakes for 45 minutes
  26. Then let cool in the pan
