chocolate apricot torte


this delicious torte is easy to put together and looks very pretty with its' alternating layers of apricot and chocolate. this is one of my favorite cake recipes that i've made many times over.

  1. Beat egg yolks and 1 / 2 cup sugar in a large mixing bowl until thickened
  2. Beat egg whites in a small bowl until foamy
  3. Gradually add remaining sugar
  4. Beating until stiff peaks form
  5. Fold into yolk mixture
  6. Gradually fold in flour
  7. Divide batter between 3 greased and floured 9-inch round cake pans
  8. Bake at 350 for 15 minutes or until golden
  9. Cool in pans for 5 minutes
  10. Remove to wire racks to cool
  11. Buttercream:whisk sugar
  12. Eggs
  13. Yolks
  14. Vanilla and coffee in a saucepan
  15. Add chocolate
  16. Cook and stir over low heat until thickened
  17. Cool completely
  18. Cream butter in a medium bowl
  19. Gradually add chocolate mixture and set aside
  20. Finely chop the apricots
  21. Drain and place in a bowl
  22. Stir in preserves and set aside
  23. Split each of the cakes into two horizontal layers
  24. Place one on a serving plate
  25. Spread with 2 / 3 cup buttercream
  26. Top with another cake layer and 2 / 3 cup apricot filling
  27. Repeat these layers twice
  28. Cover and refrigerate at least 3 hours before serving
  29. Garnish with choclate curls before serving if desired
