  1. Preheat the oven to 325
  2. In a small bowl
  3. Combine the flour
  4. Cocoa and 3 / 4 cup of the sugar
  5. In a large bowl
  6. Beat the egg whites until foamy
  7. Add the cream of tartar and the salt to the egg whites
  8. Beat the whites until billowy
  9. Add the remaining sugar in
  10. 1 tablespoon at a time
  11. Beating continuously
  12. Add the vanilla or almond
  13. When all the sugar is added
  14. Start adding the flour mix a tablespoon at a time
  15. When all the sugar and flour mix is added
  16. Scoop the batter into a 10" ungreased tube pan
  17. Bake 50-60 minutes
  18. Until cake tests done
  19. Let the cake cool 1-2 hours before trying to slice
